Tacos and Tequila

We're shaking up an old family favorite, and, making some super classy tacos. It's Chili Taco and Lime Margarita night in Esther's Kitchen, featuring a super easy way to freshen up Taco Night using our homemade mozzarella style cheeze, avocado, chili, and fresh 'pico de gallo'. You'll find the recipes below, and over in Esther's Kitchen on Facebook Chili Nacho Tacos Cuisine: Esther Approved Taco, Gluten-free, Meat Alternative Prep Time: 10 minutes Cook Time: 5 minutes Yields: 6 Tacos Author: Linda Del Pizzo | Esther’s Kitchen Ingredients • 1-15 oz (425g) can Ranchero Beans, undrained • 1 cup gardein the ultimate beefless ground • 1 teaspoon chili powder, plus more to taste • 1/2 teaspoon garlic powder • 1/2 teaspoon onion powder • 1/8 teaspoon ground black pepper • 6 corn tortillas • Baby greens of your choice • Dairyfree cheeze shreds of your choice • Red onion, sliced thin • Pickled sliced jalapeños from a can • 1 avocado, sliced • Pico de Gallo or Salsa Fresca, prepared fresh from the grocery store Instructions 1. Add the can of ranchero beans, beefless ground, chili powder, garlic powder, onion powder and ground black pepper to a nonstick stockpot. Bring to a simmer on medium-high heat. Stir occasionally. Cook for approximately 5 minutes or until the beefless grounds are cooked. 2. Assemble the tacos with baby greens on the bottom, chili, dairyfree shreds, red onion, pickled jalapeño slices, avocado slices and Pico de Gallo or Salsa Fresca. Fresh Lime Margarita w/ chili tacos Cuisine: Esther Approved Prep Time: 15 minutes Serves: 1 margarita Ingredients 2 Tablespoons organic Demerara or granulated sugar (simple syrup can also be used) Juice of 4 small limes 1-1/2 oz tequila 1/2 oz triple sec or cointreau 8 ice cubes if making frozen 6 ice cubes if serving on the rocks Lime wedge Lime-Salt or Lime-Sugar Rim Zest of 2 Limes 1 Tablespoon salt or 1 Tablespoon organic granulated sugar Mix the lime zest with either the salt or sugar on a plate. 1. Slice the lime wedge in the center. Run it around the rim of the margarita glass if you want a lime-salt or lime-sugar rim. Dip the glass rim into the lime mixture. Place ice in the glass or omit if making a frozen margarita. Place the lime wedge on the glass rim. 2. Add the sugar and lime juice in a cocktail mixer. Stir until dissolved. Add the tequila, triple sec and ice. Shake until combined. Pour into the glass. 3. For a frozen margarita, add all ingredients and 8 ice cubes to a blender. Blend on high. Pour into the glass.
